Spicy Sweet Potatoes & Chickpea Stew

Don't you love a warm, hearty bowl of stew in these winter months, almost everyone loves to eat something warming and filling.

This is a delicious recipe made with combining, spices, sweet potatoes, chickpeas, and coconut to fill you full of goodness.

I love to eat this and indeed all the other winter warmers with homemade flatbread.

Chickpeas not only contains important protein but also has many other nutrients and fiber too, they are packed with nutrients that can help keep your appetite under control, and they are rich in plant based protein.

This stew has warming spices that you need to be careful if you are a high pitta. There are lots of sweet and cooling tastes in this recipe so it will help to lift some of the heat of the hot spices.

Ingredients

  • 1 Tablespoon of ghee
  • 1 Onion chopped small
  • 2 Cloves of garlic ( 1 for Pitta)
  • 1 Teaspoon of cumin seeds
  • 1 Teaspoon of coriander powder
  • Half a teaspoon of chili flakes
  • Half a teaspoon of rosemary leaves
  • Quarter teaspoon of cayenne pepper
  • Half a teaspoon of Himalayan salt 
  • 1 Can of chopped tomatoes, buy organic
  • 1 Can of chickpeas
  • 1 Large sweet potato cut into cubes
  • A can of coconut milk
  • A handful of chopped spinach
  • Few stems of rosemary 

 Directions

In a large pot melt the ghee and add the onions, and all the spices and cook until fragrance and onion is cooked.
Add the tomatoes, chickpeas, sweet potato cubes, and coconut milk.

Bring it all to the boil, reduce heat to low, and cook until the sweet potatoes are soft, about 30 mins or so. At the end add the chopped spinach for a couple of mins, then serve with flatbread or chunky bread with ghee. Pop some rosemary leaves for decoration.
