Cabbage and Spring Onion Ayurveda Purifying Bowl
This is such a simple yet delicious and very nutritious veggie bowl.
Cabbage is best for Pitta and Kapha types, its energetics are dry and cold, with a sweet taste. Adding some oils and cooking through will help the Vata type to assimilate the energetics of cabbage.
It is rich in antioxidant vitamins and said to both inhibit and cleanse carcinogens. It is known to reduce the risk of lung, colon, breast, ovarian, stomach and bladder cancers. In addition, it is high in dietary fiber and low in calories.
It makes for a great weight loss aid, supported by minerals like iron and sulphur that support the cleansing of the digestive system.
Cabbage builds muscle, cleanses the blood and strengthens the eyes.
It boosts the immune system, lowers serum cholesterol levels, and is a good source of dietary fiber, manganese, vitamins A and B6, thiamin, riboflavin, calcium, potassium, tryptophan, protein, and magnesium.
The juice of fresh raw cabbage has been proven to heal stomach ulcers and treat fungal infections.
Ingredients
- 1 Small Cabbage washed, sliced and chopped finely
- 2 Tablespoons of ghee
- 3 Spring onions sliced and chopped finely, save some for adding at the end
- 1 Teaspoon of cumin seeds
- 1 Teaspoon of grated fresh ginger
- Half a teaspoon of salt
- 2 Tablespoons of tamari sauce
- 3 Cups of veggie stock, I always use marigold bouillion and I would put 1 tablespoon into the 2 cups of water, to make the stock
- The zest of one orange add at the end.
Directions
Heat the ghee and fry the onions and cumin until fragrant, add the shredded cabbage and fry for a few minutes and gently brown the cabbage ends.
Add the remaining ingredients and bring to the boil and simmer until cabbage is cooked through.
Serve in bowls and add the orange zest and sliced onions on top
Serve with bowls of rice
