Creamy Kale & Puy Lentil Soup

I love Kale and use it in all types of cooking the health of benefits of kale are amazing and abundant.

Rich in vitamins K, A and C, along with other vital nutrients, the health benefits of kale include detoxification, heart support, cancer prevention and a number of others.

Kale is rich in glucosinolates, it is anti-inflammatory.
Contain antibacterial and antiviral properties, it is said that it reprograms cancer cells to die off.
Helps to prevent tumor formation and metastasis.

This is a wonderful soup for a healthy lunch and a lighter evening meal.

I love puy lentils and they are wonderful in this soup, they not only taste good they are perfect for all doshas.

From an Ayurvedic perspective, Puy Lentils have the following qualities-

  • Rasa: Sweet, Astringent, Pungent
  • Virya: Cooling
  • Vipaka: Sweet
  • Qualities: Light

Actions on the doshas: Tridoshic - balances Vata, Pitta and Kapha

Action on the mind: Sattvic

Creamy Kale & Puy Soup

Ingredients

  • One cup of puy lentils 
  • Half a cup of brown rice 
  • Half of a medium onion, finely chopped
  • 4 tablespoons of olive oil
  • A large bunch of kale 
  • 5 cups water

Herbs & Spices etc

  • 1 or 2 cloves of garlic. ( High Pitta should only use 1)
  • 1 teaspoon of cumin powder 
  • 1 tablespoon of vegetable bouillon 
  • Half a teaspoon of curry powder
  • Salt and pepper to taste
  • 1 tablespoon of tahini
  • 1 teaspoon of coconut oil
  • 1 tablespoon of tamarind sauce

Directions

Wash kale and chop finely.

Heat the olive oil add onions and cook until soft. Add spices, blend well. Then add the puy lentils and brown rice and stir well into the spice mix, lastly add the chopped kale. 

Add the water, bring it to the boil and simmer for about 45 minutes until the puy is cooked and soft.

While the soup is cooking, combine tahini, coconut oil and tamarind until its smooth and creamy.

Add this to the soup mixture and either eat as it is or puree with a hand blender.

This soup is fairly balanced for all doshas
