Delicious Ayurveda Sweet Rice, Rocket & Mushrooms
This is a simple, delicious and a great purifying dish as it's easy to digest and it brings a sattvic, comforting quality to the body. Its really easy to make and you can add other ingredients if you like.
I prefer to keep it pure and simple as it is.
Ayurveda embraces white rice, particularly long-grained, fragrant basmati rice because it is lighter and easier to digest. White basmati rice is also sattvic (pure) and balances the three doshas, Vata, Pitta, and Kapha.
Shiitake mushroom or black mushrooms are considered the best for all doshas and tend not to increase the dosha constitution. These are often found dried and that's fine as we soak them beforehand.
Ingredients
- Half a cup of dried shitake mushrooms
- 2 Spring onions
- 1 tablespoon of ghee
- 1 Tablespoon of barley syrup or other natural sugar replacement
- 1 Tablespoon of tamari or soy sauce
- 2 cups of Basmati Rice
- Salad leaves, rocket.
- A few shavings of vegan cheese
- A few springs of coriander leaves
Directions
Just cover and soak the mushrooms in water until they are soft and chop into small pieces. Keep the water to add to the rice later.
Chop the onions and gently fry in the ghee, add the mushrooms, sweetener and soy sauce and cook until all the sauces have mingled and are caramelised.
Cook the basmati rice by adding 4 cups of water, but make up the water with the mushroom water from previously. Cook until almost ready then add the mushroom and sweet mix to the add.
Cover with a lid and leave for 5 mins or so until the rice has absorbed the mushroom mix and its cooked through.
Serve in bowls with sprigs of coriander leaves, salad leaves and shavings of cheese.
