Easy Mango Sweet or Ice Cream - Aam Ras

This is a delicious sweet and in many ways, it would not be recommended from an Ayurvedic perspective, but now and again we can break some of the rules if we are mindful and add the necessary spices to help us.

This is an ancient Indian desert and can be eaten cooled after blending or frozen for a simple homemade ice cream 

Ayurveda reminds us that mixing dairy with fruit is difficult for the digestive system, so always use non-dairy cream. I've added some cardamom seeds to help with digestive concerns and warm up the dish.

I've also added saffron which is a divine spice but well worth using in some special dishes, its a wonderful sattvic spice which pacifies all 3 doshas and cools the heat fond in mangoes.

Mangoes have varying Ayurveda recommendations, so say they are not good for Pitta unless they are overripe and very sweet, other also say that mangoes and not ok for Kapha because they are heavy and sticky. This is a treat for all doshas, so use selectively.

 Ingredients

  • We want about 2 very ripe mangos
  • 1 tub of nondairy cream
  • Break open 3 cardamon pods and use the seeds 
  • 5 Strands of Saffron
  • 1 teaspoon of sweet syrup of your choice 

 Directions

Remove the skins and stone the mangoes and along with all the other ingredients blend everything until its combined. Spoon into bowls and chill before serving with a sprig of fresh mint or spoon into a freezer container and freeze for a few hours. I like to have mine half frozen and yummy runny!
