Millet and Bean Ayurveda Bowl
Millet is drier and warmer than other grains. Vata needs to eat millet occasionally as it can dry out the body, millet is good for Kapha and Ok for Pitta. Its astringency can help bind diarrhea. It is warmer than other grains, stimulating good digestion and Agni.
Ingredients
- 1 cup millet
- 2 tablespoons olive oil
- half of a yellow onion,
- small green pepper chopped small
- diced 1 cup black beans, drained and rinsed
- 2 plum tomatoes, deseeded and diced
- a handful of fresh cilantro, chopped
- Salt and pepper to taste
Instructions
Cook the millet adding 3 cups boiling veggie stock or water and half a teaspoon salt (optional), or to taste, to a large pan or a medium pot.
Return to a boil, then reduce the heat and cover the pot. Simmer, stirring occasionally, until all the liquid has been absorbed about 20 mins.
While millet is cooking, over medium heat cook the onion, pepper, and black beans for about 5 minutes, until onions are tender.
Place veg and beans in a bowl, toss with tomatoes and chopped cilantro.
Add the cooked millet and season to taste.
Serve with rice or salad.
