Quinoa, Avocado, Brussel Sprout Leaves, Energy Bowl

I love this energy bowl, but I also love Brussel sprouts and when you cook them this way you will love them too. Packed full of energy, remember to go easy on the avocado for Kapha or Kapha problems. I've added some ginger in the lime juice to help counteract the avocado, so its fine to have this now and then.

This has an oriental feel to it and tastes fabulous.

Ingredients
A couple of handfuls of Brussels sprouts pull off the leaves so that you have a cup of them

  • 1 Teaspoon of ghee
  • Salt & Pepper to taste
  • 1 cup of cooked quinoa. Just follow the instructions on the pack, but its usually 2 cups of water to one cup quinoa
  • Juice of half a lemon
  • Grate a thumb size of ginger and squeeze out the juice, add it to the lime
  • An avocado cut into cubes
  • 1 Tablespoon of chopped fresh coriander

Directions

On an oven tray spread the ghee and then toss the Brussels sprout leaves with salt, and pepper. Spread in an even layer. 
Roast for 5 to 10 mins in a hot oven, you can do this under the grill if you like, but I think t works better in the oven. The leaves should be just brown at the edges from the melted ghee.

Separately add the avocado together with quinoa, lime and ginger mix and right at the end toss in the roasted Brussels sprouts leaves. Sprinkle coriander leaves on top.
