So Simple Bulgur Tabbouleh with Aromatic Herbs
Such a simple recipe, no need for cooking and it can be left while you are preparing other food.
I love to eat this on its own in a bowl and often topo it with halloumi or tofu, simple and delicious and fuill of goodness.
Ingredients
- 1 cup of bulgar
- 2 tomatoes
- 1 red onion
- 1 bunch parsley
- 1 bunch mint
- Juice of 1 lemon
- 2 tbsp olive oil
- ground cumin
- Salt
Directions
Place the bulgur in a large bowl and soak in the hot water until the water is absorbed, (about 30 minutes). When it's ready, drain any excess.
Add the olive oil, lemon juice, salt and half a teaspoon of cumin. Leave to cool.
Wash And trim the herbs. Dry and chop them coarsely. Add to the cooled bulgar tabbouleh and mix well.
Add tomatoes, seeded and chopped small, with chopped onions.
Serve with tofu or other veggies, I like to add avocado and some chickpeas, you can add anything you like.
