Sweet Potato Fries with Ayurveda Herbs
Sweet potato fries are very moreish, so we need to careful about how many we eat. Kapha should always eat less as they also have the ghee that adds to the higher calories. You can add some spicier herbs to help counteract the sweetness.
We have Sweet Potato fries with Quorn burgers and coleslaw, a real treat but go easy, it can turn into a high calories dish, but once in a while its fine!
Ingredients
- Depending on how many people you are cooking for, one medium potato can be enough for a hungry person.
- Sweet potatoes
- Ghee to cover the fries
- 1 teaspoon of Cumin seeds
- Half a teaspoon of mustard powder
- 1 teaspoon of dried parsley
- 1 teaspoon of dried thyme
- 1 garlic clove chopped small
- Salt and pepper
Directions
Preheat oven to 500°F.
Cover a large baking sheet with ghee.
Mix all the herbs in a large bowl, not the garlic.
Melt a tablespoon of ghee and toss the potato fries in the bowl to cover with ghee, then toss the herbs over the potatoes top cover with herb mixture,
Spread sweet potatoes on the baking tray and sprinkle the garlic over them.
Cook in the oven until they are browned and ready to eat, about 30 mins, keep an eye on them and turn over a couple of times.
