Tofu & Veg Muffin/Bun/Toast Filling/Spread
Tofu & Veg Muffin/Bun/Toast Filling/Spread

There is such a lot of controversy about tofu, I'm going to do a full bog on it soon. But for the time being tofu energetics are considered to be dry, cold and heavy with an astringent taste. So taking this into account its fine for Vata and Pitta but not for Kapha.
I would add lots of heating light spices to make it more acceptable for Kapha types. Light cumin, coriander, or use the Kapah masala mix here on the site.
This is a filling that can be used for lots of things muffins, buns, wraps, even jacket potatoes.
I've used some leftover sweet potatoes and added it to the tofu mix as you can see in the picture.
Ingredients
1 Pack of firm tofu crumbled with a fork
About 2 tablespoons of soya milk
A tablespoon of yeast flakes
A teaspoon of maple syrup
Half a teaspoon of turmeric
2 Teaspoons of tamari
Half a teaspoon of cumin seeds
Half a teaspoon of your dosha masala mix
Salt and Pepper to taste if you fancy it
Any small chunks of veg of your choice, I used sweet potatoes, but you can also use chopped red and green peppers.
Additions for after cooking - examples
- Cherry tomatoes
- Cucumber slices
- Avocado slices
- Fresh coriander leaves
- Spicy Salsa
Directions
In a large frying pan on medium heat add all ingredients and cook for about 5 mins or so making it into a thick paste that you can spoon onto toast or muffins etc. Or dish into a bowl and serve with brown toast.
Add the extra toppings of your choice and enjoy a really tasty nutritious lunch or breakfast.
