Warming Carrot, Ginger and Cumin Soup
Carrot, Ginger and Cumin Soup
This soup has all the ingredients needed for a great healthy soup with a natural diuretic effect.
Ingredients
- 6 medium carrots scraped and sliced thinly
- 1 tablespoon ghee
- 1 onion, finely chopped
- A small thumb size piece of fresh root ginger, peeled and grated
- 1 teaspoon of cumin seeds
- 1 tablespoon of organic veg bouillon
Half of a leek
Directions
Gently fry the onion and cumin in the ghee until its soft and fragrant about 5 mins.
Add carrots and ginger and cook stirring with the ghee and seeds for a further 5 mins
Cover with water and add the bouillion cover and simmer for about 15 mins until everything is cooked and soft.
While it's cooking, slice the leek thinly and fry in a tiny amount of ghee until its crispy.
I use a hand blender to blend the soup and I like to keep some texture, so I never blend it smooth
Sprinkle the crispy leeks on the top of the soup, this adds wonderful texture.
