Yummy Sweet Potato Hash Browns
Yummy Sweet Potato Hash Browns

These are so quick and easy to make, I couldn't resist adding them to the recipe listings.
The biggest job is to grate everything first, I added a little feta cheese and loved them. I served them up with a handful of rocket salad and my hubby scoffed them with brown sauce!! Yes, I know but whatever you fancy!
This is great for Vata, Ok for Pitta and very occasionally for Kapha. Its the oil and frying for Pitta and Kapha and the sweetness of the Sweet potato particularly for Kapha, which could be adapted using a white potato.
Ingredients
- 1 Large Sweet potato grated.
- 1 Large grated carrot grated
- 1 Small beetroot grated
- 3 Spring onions chopped small
- 1 Egg or if vegan use egg substitute, I've not done this but the egg is for binding.
- I also added a bunch of chopped chives and some coriander leaves as I had them in.
- Half a teaspoon of cumin seeds
- Flour of your choice for covering the patties
- Ghee or olive oil for frying
- Salt and Pepper to taste
- Grated feta cheese, optional
Directions
Mix everything but the oil together in a large bowl, mixing it and combining it together with your hands.
Then take pattie size spoonfuls and gently toss them in the flour on a board to just lightly cover them as you make them flat and round.
Heat up the oil in a frying pan and add the patties one or two at a time and fry for about 5 mins each side, not too hot but the edges get crispy, takes about 7 to 10 mins each one to cook. I put 4 in my pan at once.
