Cauliflower and Apple Bowl

Cauliflower pacifies Pitta and Kapha and can aggravate Vata, however, cooked with apple and served warm, its much more Vata friendly.

This is an unusual combination but it tastes great with the added curry powder. You can add cream or cream substitute for a thicker creamier texture and taste.

This delicious warming soup is a popular favourite.

Ingredients

  • 2 Tablespoons of ghee
  • 1 Medium onion, roughly chopped
  • 2 Garlic cloves grated(1 for Pitta)
  • 2 Teaspoons curry powder
  • 1 Medium Cauli, cut into chunks, you will blend this
  • 1 Apple, I use Grannie Smiths which are not too sweet, peeled and chopped small
  • 4 to 6 cups of veggie stock, depends how soupy you want it
  • Half a teaspoon of salt
  • A good pinch of black pepper
  • 2 Teaspoons of coconut sugar
  • Coriander leaves chopped 
  • Cream added for a creamy thicker soup texture

Directions

Heat the ghee in a large pot add the onions and garlic and cook, until soft and fragrant a couple of minutes.

Add the curry powder and cook a few minutes more. Add the cauliflower, diced apple, veggie stock, sugar, salt, and pepper.

Bring to the boil and simmer until soft and ready to blend.

Blend but leave some texture and add about half a cup of cream, or leave the cream to swirl at the end.

Serve in bowls with chopped coriander leaves.
