Courgette Veggie Bowl

Apart from being so simple to cook with courgettes, they are also really easy to digest, making it perfect for people suffering from constipation, acid reflux, tiredness, and other disorders, its a perfect food for when you want to cleanse the system.

As its low in calories, courgettes are good for losing weight, so this is a really good detox bowl and great to have after overindulgence.

This is such an easy dish that can be whipped up in minutes.

It is good for Vata and Pitta and if you add some extra spices it's not too problematic for Kapha, although courgettes are full of water and can add to an already out of balance Kapha with water excess problems.

Ingredients

  • 3 or 4 Courgettes, sliced and diced
  • Half a teaspoon of rock salt
  • Half a teaspoon of coriander powder
  • Half a teaspoon of cumin powder
  • A quarter of a teaspoon of turmeric 
  • 2 Spring onions
  • 1 Clove of grated garlic
  • 2 Cups of Veggie stock 
  • 2 Tablespoons of ghee
  • Sprinkling of pepper

Directions

Fry the spring onions,  garlic and spices in the ghee for a few mins until fragrant. Add the courgettes and brown slightly. Add the veggie stock bring to the boil and simmer until courgettes are soft about 10 mins.

Serve in bowls with a sprinkling of pepper to finish
